Happy Pancake Day! It's been on our minds on whether to do either a delicious classic thin pancake recipe with lemon and sugar (a personal fave!) or go big and fluffy for our hungry #pamfam readers. Traditionally, Shrove Tuesday is about clearing out all the fattening ingredients you have in the cupboard and preparing for lent. We've gone for american style fluffy pancakes with the addition of delcious, ripe bananas! Here's our recipe for the fattest, most indulgent banana pancakes.

Chubby Banana Pancakes

INGREDIENTS

- serves 2 to 3 (or 1)
2 large eggs
200 ml full fat milk
3 tbsp white sugar
¼ tsp vanilla extract
100 grams all-purpose flour
150 grams self raising flour
teaspoon of baking power

tablespoon of cinnamon
teaspoon of baking power
100g of Butter (for cooking with)
3 Bananas

METHOD

1) Seperate the eggs whites from the egg yolks and put the whites in the fridge for the time being. Whisk together the egg yolk, sugar and the vanilla extract.
2) Add the milk.
3) Sift in flour, baking powder and cinnamon. Add a touch of salt!
4) Gently whisk the mixture together.
5) Use an electric whisk on the eggs whites until the liquid becomes all light and fluffy!
6) Gently fold in the egg whites into the pancake mixture, By this point, the mixture should be thick and hold its form for hitting the pan!
7) Use a ladle to scoop the mixture on to the frying pan.
8) Get the chopped the banana lay it into one side of the pancakes.
9) Flip the pancake over gently with a spatula.
10) Serve the pancakes with homemade whipped cream and maple syrup.
11) Put on some netflix and indulge!
